Ingredients
- 2 boxes cherry Jell-O
- 1 cup finely chopped celery
- 1 (15 oz) can crushed pineapple, drained (reserve juice)
- 1 can cranberry sauce (jellied)
- ⅓ cup lemon juice
- 1 cup lemon-lime pop (7Up)
- 8 oz whipped topping (Cool Whip)
- 8 oz cream cheese, softened
- Pecans (chopped, for garnish if desired)
Instructions
- Prepare juice liquid: Drain the crushed pineapple into a measuring cup, keeping the juice. Add enough water to the pineapple juice to equal 1 cup of liquid.
- Dissolve gelatin: Bring the 1 cup of juice/water mixture to a boil in a small saucepan. Add the 2 boxes of cherry Jell-O gelatin and stir until completely dissolved.
- Blend cranberry mixture: Place the jellied cranberry sauce, lemon juice, and dissolved gelatin liquid into a blender (or use a hand mixer in a bowl) and blend until smooth.
- Mix & set: Combine the blended cranberry mixture with the 1 cup of lemon-lime pop. Stir in the drained crushed pineapple and finely chopped celery. Pour into a dish and refrigerate until fully set.
- Make frosting & assemble: Beat the softened cream cheese and whipped topping together until smooth. Spread over the set gelatin layer.
- Garnish & serve: Top with chopped pecans if desired, slice, and serve chilled!
