Ingredients
- 12 oz cooked link sausage, sliced ¼-inch thick
- 1 med onion, chopped
- 1 can (16 oz) tomato sauce
- 1 can (15 oz) garbanzo beans (with liquid)
- 1 can (10 ½ oz) condensed beef broth
- 1 ½ cups water
- ½ lb zucchini, sliced ¼-inch thick
- 1 bay leaf
- 1 tsp dried basil
- ¼ tsp garlic powder
- ¼ tsp black pepper
- Grated Parmesan cheese (for serving)
- Italian bread (for serving)
Instructions
- Sauté sausage and onions: Cut the sausage into ¼-inch slices. In a large pot over medium heat, sauté the sausage slices with the chopped onion until the onions are softened.
- Combine ingredients: To the same pot, add the tomato sauce, garbanzo beans (with liquid), condensed beef broth, water, sliced zucchini, bay leaf, dried basil, garlic powder, and black pepper.
- Simmer: Bring the soup to a boil. Reduce heat, cover, and simmer until all the vegetables are tender (about 15–20 minutes). Remove the bay leaf before serving.
- Serve: Ladle into bowls, sprinkle grated Parmesan cheese on top, and serve warm with fresh Italian bread!
